Orecchiette sausage and saffron

Ingredients:
For 2 people

200g orecchiette
150 gr sausage
100g ricotta cheese
Zafferano Collina d’Oro (3 threads each person)
125 grams of milk
parmesan
oil
salt
pepper
chopped parsley


Preparation:
Remove the skin from the break sausage, let it brown in a pan with oil, add milk, season with pepper and cook over low heat for 20 minutes;
Salt and pepper the ricotta, add the saffron and knead until you have a smooth paste;
Cook the pasta, put it in a bowl with the ricotta and stir, pour it into the pan; with sausage, add the Parmesan cheese and chopped parsley, remove from heat and serve.
